History
In 1670, Dom Perignon (1638-1715), a monk of the abbey cellarer bénédictineHautvillers, will be the first to perform the assembly of the grape, which improves the quality of wine and wiped out some flaws. Dom Perignon is also introducing the use of cork in the bottle held by a string of hemp impregnated with oil, allowing the wine to retain its freshness and foam. Additionally, he strengthened the bottles by adopting a thicker glass to prevent the bottle exploded, but despite the efforts of the monk, the effervescence of the wine remains until the empirical research of Pasteur on fermentation in the nineteenth century . The chalk pits near his abbey will be used to keep the champagne at temperature and humidity constant. Subsequently, other wineries will be dug in the middle chalk. of
